I found several versions of Clotted Cream on the internet. This seemed one of the easiest and perhaps tastiest. Having just made a recipe using Mascarpone Cheese I thought this would be great with the Guinness Cake. Again, Enjoy!!!
4 ounces Mascarpone cheese
1 cup (240 ml) heavy whipping cream
1 teaspoon vanilla extract
1 or 2 tablespoons granulated white sugar
Beat all ingredients together until mixture holds its shape and looks like softly whipped cream. makes 1 and 1/2 cups of cream.
